Creating a sustainable fine dining experience in Warsaw begins long before any cooking takes place. It starts with care for the land, respect for people, and conscious decisions that shape more than just a visit to a fine dining restaurant.

We look for harmony between nature and creation, building a menu rooted in locality, responsibility, and an understanding of the limits set by nature.

8 goals we will achieve by 2027

We have set ambitious environmental and social goals that define the direction of hub.praga - one of Warsaw’s leading fine dining restaurants. These goals are our declaration of responsibility: supporting loyalty in its many forms, sustainably managing resources, eliminating single-use packaging, and strengthening our community. Everything we do is measurable, visible, and part of the daily life of our fine dining kitchen.

We planted 200 trees

In 2025, we planted 200 trees, offsetting 15 tons of CO₂ and reforesting 300 m² of land.  We collaborate with the Aeris Futuro Foundation through the “Czas na Las” (Time for Forest) program. Every reservation at hub.praga - one of the most awarded fine dining restaurants in Warsaw - supports further plantings.

Slow Food Polska Recommendation

We constantly optimize our supply chains, supporting locality and regional identity. This strengthens not only ingredient quality but also the environmental responsibility that defines modern fine dining in Warsaw.

We were awarded the Slow Food Polska recommendation for our “masterful, creative, and deeply original interpretation of Poland’s culinary richness.” It confirms our daily efforts to redefine the fine dining experience in Warsaw through sustainability and authenticity.

Our menu preparation process is designed to minimize food waste. A prepayment system allows us to better manage orders and reduce leftovers. We use handcrafted porcelain and repair it before considering replacement, reducing the environmental impact of our fine dining operations.

Water saving

Our resource-saving program has reduced water consumption by 18% annually. Aerators, eliminating bottled water, and simple details such as choosing soap that foams and rinses efficiently help us build a more sustainable fine dining restaurant in Warsaw.

Energy

100% of the energy used at hub.praga comes from renewable sources, certified by “Zielona Energia od Axpo”. We do not waste energy cooling water thanks to specialized filtration systems. Intelligent LED lighting and dishwashers with heat and steam recovery further minimize energy use. Our ventilation and air-conditioning systems operate with heat pump recuperation to reduce CO₂ emissions associated with fine dining venues.

Optimizing supply chains

We shorten supply chains to support local producers and artisans. We choose ecological, certified, and responsibly sourced products. Our wine list focuses on organic and biodynamic winemakers, elevating the fine dining Warsaw experience through transparency and craftsmanship.

Local and social initiatives

We have donated nearly 8,000 PLN to foundations and local initiatives. Responsibility also means timely payments to employees, partners, and suppliers, ensuring long-term stability within our fine dining ecosystem.

Zero Waste - Less Waste

Our Zero Waste - Less Waste program is built in cooperation with suppliers who reduce packaging and share our sustainability values. Together, we lower the amount of waste generated by our restaurant.

From the Heart of Poland

This project celebrates the finest Polish and regional ingredients, created in collaboration with local foragers, producers, and passionate artisans. It brings together respect for nature and traditional Polish flavors while supporting our Zero Waste - Less Waste philosophy. Signature products, such as our truffle salt made with full use of the ingredient, enrich the fine dining experience at hub.praga.

From the heart of Poland

Urban farm

A selection of our herbs comes directly from our patio garden. It is freshness straight from nature, fewer deliveries, less packaging, and a reduced carbon footprint - a small urban garden that supports sustainable fine dining in Warsaw.
