From the heart of Poland is a hub.praga project focused on the best Polish and regional products. It is the result of a careful search for exceptional ingredients, quality and close cooperation with producers and enthusiasts. It is all brought together by respect for nature and culinary traditions from the heart of Poland.

Our truffles are collected by Filip in Ponidzie, Świętokrzyskie Province. Filip is an enthusiast of these unique mushrooms. He looks for and grows summer, autumn and black truffles in Ponidzie and all over Poland. www.truflazdoliny.pl, Facebook: Trufla Ponidzka.

Ingredients: Ponidzie summer truffle 20%, Maldon sea salt flakes, smoked sea salt, Wieliczka rock salt (10%)

Store sealed salt in a dry and dark place. Once opened, store in the fridge for up to 3 months. Use as a seasoning, for homemade pasta or risotto.

oil from masurian boletus

Precious boletus caps are collected by our neighbour - Jola and her parents - in forest areas, mainly in Masuria. Our collaboration is the result of mutual neighbourly activities and a passion for excellent Polish ingredients.

Ingredients: cold-pressed sunflower oil, shallots, garlic, thyme, bay leaf, pepper, dried boletus caps.

Store sealed oil in a dry and dark place. Once opened, store in the fridge for up to 3 months. Use to drizzle over any dish with mushrooms, soups, homemade pasta or risotto, or for classic tartare.

 

Both salt with Polish truffle and oil with Masurian boletes can be purchased from the restaurant.
